Some nights call for a skillet full of comfort. This Cajun-inspired smothered chicken brings together golden chicken thighs, the classic onion, bell pepper, and celery combination, and a rich pan gravy. Spoon it over rice and let supper do the talking.
For a Zachran’s twist, use Zachran’s Cajun Fried Chicken Seasoning to season the chicken, even though this recipe is pan-seared rather than deep-fried. Start with a little and adjust to your taste.
Recipe at a glance
Serves: 4
Prep time: 15 minutes
Cook time: About 35 minutes
Total time: About 50 minutes
Ingredients
- 1½ pounds boneless, skinless chicken thighs
- 2 teaspoons Zachran’s Cajun Fried Chicken Seasoning, plus more to taste
- 2 tablespoons neutral cooking oil
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 2 cups low-sodium chicken broth
- ½ teaspoon dried thyme
- 1 bay leaf
- Black pepper, to taste
- Salt, only if needed after tasting
- Cooked white rice, for serving
- Chopped green onions or parsley, for finishing
- Hot sauce, optional
How to make it
- Season the chicken. Pat the chicken dry and sprinkle both sides with the seasoning. Hold off on extra salt until you taste the finished gravy.
- Brown it. Heat the oil in a large skillet over medium-high heat. Add the chicken in a single layer, working in batches if needed. Brown for 3–4 minutes per side, then transfer to a plate. The chicken will finish cooking in the gravy.
- Build the flavor. Reduce the heat to medium. Add the onion, bell pepper, and celery. Cook for 6–8 minutes, stirring and scraping up the browned bits, until softened. Add the garlic and cook for 30 seconds.
- Make the gravy. Sprinkle the flour over the vegetables and stir for 2 minutes. Gradually pour in the broth while stirring to keep the gravy smooth. Add the thyme and bay leaf.
- Smother and simmer. Return the chicken and its juices to the skillet. Bring to a gentle simmer, cover, and cook for 15–20 minutes, until the thickest part of each thigh reaches 165°F on a food thermometer. If the gravy needs thickening, uncover and simmer a few minutes longer. Add a splash of broth if it gets too thick.
- Finish and serve. Remove the bay leaf. Taste the gravy and adjust the seasoning, black pepper, and salt only as needed. Serve over cooked rice and finish with green onions or parsley. Put hot sauce on the table for anyone who wants extra heat.
Tips for a better skillet
- Don’t crowd the chicken. Giving each piece space helps it brown instead of steam.
- Keep the simmer gentle. A low simmer keeps the chicken tender and the gravy from reducing too quickly.
- Season to your table. Start with the amount listed, then taste before adding more seasoning or salt.
- Make it a meal. Serve with sautéed greens, green beans, or a simple side salad.
