A Louisiana Classic Done Right
Few dishes capture the soul of Louisiana cooking quite like a pot of Cajun Red Beans and Rice with Sausage. This hearty, flavor-packed meal has been a Monday staple in New Orleans for generations — and once you taste it, you'll understand why.
Why This Dish Works
The magic is in the layers of flavor. Smoky andouille sausage, the Cajun "holy trinity" of onion, celery, and bell pepper, and a generous hand with bold Cajun seasoning come together to create a dish that's deeply satisfying without being complicated.
Ingredients
- 1 lb dried red kidney beans, soaked overnight
- 1 lb andouille sausage, sliced into rounds
- 1 large onion, diced
- 3 stalks celery, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 2 tbsp Zachran's Cajun Seasoning
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 bay leaves
- 6 cups chicken broth
- Salt and black pepper to taste
- Cooked white rice, for serving
- Green onions and hot sauce, for garnish
Instructions
- Brown the sausage. In a large heavy-bottomed pot or Dutch oven, cook the andouille sausage over medium-high heat until browned. Remove and set aside, leaving the drippings in the pot.
- Sauté the holy trinity. Add the onion, celery, and bell pepper to the pot. Cook for 5–7 minutes until softened. Add the garlic and cook for another minute.
- Season generously. Stir in Zachran's Cajun Seasoning, smoked paprika, and thyme. Let the spices bloom for 1–2 minutes.
- Add beans and broth. Add the soaked and drained beans, browned sausage, bay leaves, and chicken broth. Bring to a boil.
- Simmer low and slow. Reduce heat to low, cover, and simmer for 1.5–2 hours, stirring occasionally, until beans are tender and creamy. For extra creaminess, mash a portion of the beans against the side of the pot.
- Adjust seasoning. Taste and adjust salt, pepper, and Cajun seasoning as needed. Remove bay leaves.
- Serve. Ladle over fluffy white rice and top with sliced green onions and a dash of hot sauce.
Tips for the Best Red Beans & Rice
- Don't skip soaking the beans — it cuts cook time and improves texture.
- Low and slow is key — rushing the simmer leads to firm beans and thin sauce.
- Mash some beans for that signature thick, creamy consistency.
- Zachran's Cajun Seasoning does the heavy lifting — its bold blend of spices means you don't need a long ingredient list to get deep flavor.
Make It Your Own
Swap andouille for smoked sausage, add shrimp in the last 10 minutes, or go vegetarian by skipping the meat and using vegetable broth. This dish is forgiving and flexible — just don't skimp on the seasoning.
