Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning (divided)
- 2 tbsp olive oil
- 8 oz andouille sausage, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups cooked white or brown rice
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Toss shrimp with 1 tbsp Cajun seasoning. Set aside.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook andouille sausage slices until browned, about 3–4 minutes. Remove and set aside.
- Add remaining oil to the skillet. Sauté onion and bell peppers for 4–5 minutes until softened. Add garlic and cook 1 minute more.
- Stir in diced tomatoes and remaining Cajun seasoning. Simmer for 5 minutes.
- Add shrimp to the skillet and cook for 2–3 minutes per side until pink and cooked through.
- Return sausage to the pan and stir to combine. Season with salt and pepper.
- Serve over rice, garnished with fresh parsley and a squeeze of lemon.
Tips
Adjust the Cajun seasoning to your heat preference. For extra smokiness, add a pinch of smoked paprika. This dish also works great with chicken thighs instead of shrimp.
