Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 stick (½ cup) unsalted butter
  • 1 cup onion, finely diced
  • ½ cup celery, finely diced
  • ½ cup green bell pepper, finely diced
  • 4 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup shrimp or chicken stock
  • 2 tbsp our Cajun Seasoning Rub (adjust to taste)
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Cooked white rice, for serving
  • Fresh parsley and green onions, for garnish

Instructions

  1. Sauté the Holy Trinity: Melt butter in a large skillet over medium heat. Add onion, celery, and bell pepper. Cook for 8–10 minutes until softened.
  2. Add garlic and seasoning: Stir in garlic and our Cajun Seasoning Rub. Cook for 1–2 minutes until fragrant.
  3. Build the sauce: Add diced tomatoes, stock, and Worcestershire sauce. Stir well and simmer for 10 minutes until slightly thickened.
  4. Add the shrimp: Stir in shrimp and cook for 3–5 minutes until pink and cooked through. Do not overcook.
  5. Serve: Spoon étouffée over white rice and garnish with fresh parsley and green onions.

Tips for the Best Étouffée

  • Use fresh Gulf shrimp for the most authentic flavor.
  • Don't rush the Holy Trinity — letting it cook down slowly builds a deep, rich base.
  • Adjust the heat level by adding more or less of our Cajun seasoning.
