Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 stick (½ cup) unsalted butter
- 1 cup onion, finely diced
- ½ cup celery, finely diced
- ½ cup green bell pepper, finely diced
- 4 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup shrimp or chicken stock
- 2 tbsp our Cajun Seasoning Rub (adjust to taste)
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Cooked white rice, for serving
- Fresh parsley and green onions, for garnish
Instructions
- Sauté the Holy Trinity: Melt butter in a large skillet over medium heat. Add onion, celery, and bell pepper. Cook for 8–10 minutes until softened.
- Add garlic and seasoning: Stir in garlic and our Cajun Seasoning Rub. Cook for 1–2 minutes until fragrant.
- Build the sauce: Add diced tomatoes, stock, and Worcestershire sauce. Stir well and simmer for 10 minutes until slightly thickened.
- Add the shrimp: Stir in shrimp and cook for 3–5 minutes until pink and cooked through. Do not overcook.
- Serve: Spoon étouffée over white rice and garnish with fresh parsley and green onions.

- Don't rush the Holy Trinity — letting it cook down slowly builds a deep, rich base.
