The Ultimate Louisiana Comfort Food
Cajun Smothered Chicken is pure Southern soul food — tender chicken thighs slow-cooked in a rich, savory Cajun gravy made with the Holy Trinity of onions, celery, and bell pepper. Our authentic Louisiana Cajun seasoning takes this dish to a whole new level.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp our Cajun Seasoning Rub
- 3 tbsp vegetable oil
- 1 cup onion, diced
- ½ cup celery, diced
- ½ cup green bell pepper, diced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp hot sauce (optional)
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- Cooked white rice or mashed potatoes, for serving
- Fresh green onions, for garnish
Instructions
- Season the chicken: Pat chicken thighs dry and coat generously with our Cajun Seasoning Rub on all sides.
- Sear the chicken: Heat oil in a large heavy skillet or Dutch oven over medium-high heat. Sear chicken skin-side down for 5–6 minutes until golden brown. Flip and sear another 4 minutes. Remove and set aside.
- Build the gravy base: In the same skillet, add onion, celery, and bell pepper. Cook for 6–8 minutes until softened. Add garlic and cook 1 minute more.
- Make the roux: Sprinkle flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste.
- Add liquid: Slowly pour in chicken broth while stirring. Add Worcestershire sauce and hot sauce. Bring to a simmer.
- Smother the chicken: Return chicken to the skillet, nestling it into the gravy. Cover and cook on low heat for 35–40 minutes until chicken is fall-off-the-bone tender.
- Serve: Plate over white rice or mashed potatoes and garnish with green onions.
Pro Tips
- Don't skip the sear — it builds deep flavor in the gravy.
- Bone-in chicken stays juicier and more flavorful than boneless.
- The longer it simmers, the richer the gravy gets.
