Ingredients

  • 4 catfish fillets
  • 2 tbsp Zachrans Cajun Seasoning
  • 1 cup cornmeal
  • 1/2 cup flour
  • Oil for frying
  • 1 lb dried red kidney beans
  • 2 cups long grain white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 smoked sausage link, sliced
  • Green onions and hot sauce for serving

Instructions

  1. Soak red beans overnight. Cook with onion, garlic, and smoked sausage until creamy. Season with Zachrans Cajun Seasoning.
  2. Cook rice according to package directions.
  3. Season catfish fillets with Zachrans Cajun Seasoning. Coat in cornmeal and flour mixture.
