Ingredients

  • 1 lb crawfish tails (fresh or frozen, thawed)
  • 1 stick (1/2 cup) unsalted butter
  • 1 cup onion, finely diced
  • 1/2 cup celery, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 4 cloves garlic, minced
  • 1 can (10 oz) cream of mushroom soup
  • 1/2 cup chicken broth
  • 2 tbsp Zachran's Cajun Spice Blend
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste
  • 3 green onions, sliced
  • Fresh parsley, chopped
  • Cooked white rice, for serving

Instructions

  1. Melt the butter: In a large heavy skillet or Dutch oven over medium heat, melt the butter until foamy.
  2. Cook the trinity: Add onion, celery, and bell pepper. Sauté until softened and translucent, about 8–10 minutes. Add garlic and cook 1 more minute.
  3. Season: Stir in Zachran's Cajun Spice Blend and Worcestershire sauce. Cook for 1 minute until fragrant.
  4. Build the sauce: Add cream of mushroom soup and chicken broth. Stir well to combine and bring to a gentle simmer. Cook for 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Add the crawfish: Fold in the crawfish tails and cook for 5–7 minutes until heated through and cooked. Do not overcook — crawfish tails toughen quickly.
  6. Finish: Stir in green onions and parsley. Taste and adjust seasoning with salt and pepper.
